Last night I was trying to write-up yesterday’s recap, but I was having issues because I had 20 episodes of How I Met Your Mother on my DVR to get through, and Barney was just way too freakin’ cute. And I chose Barney over my blog.
Anyways, yesterday I didn’t have anything too exciting food wise to blog about. Tuesday night I really failed on the eating healthy front and went overboard on peanut butter. Needless to say, I wasn’t feeling good at all yesterday morning and day, so I kept all meals light, but I did enjoy a crisp bowl of watermelon.
Back home, I used to go through an entire watermelon in a few days time, sooooo since it’s watermelon season and I’ll be at my parents Friday night, I’d love to see a cut up watermelon in there. Hint hint Mom, Dad.
Speaking of my Dad, sometimes he’s not a good texter. He’ll ask me a question and I’ll respond right away, only to never get a response. Or a response the next day. So yesterday when he texted me back a day later, I called him out on it. Then he made me laugh.
He fired off those texts without giving me a chance to respond, and his random snakes made me pee my pants from laughter, which is what I’ll blame my typo on. And the random snowman?
Wondering why my Dad is listed as JB? We call him Johnny Boy, or JB for short. If someone went through my phone for an emergency contact, they’d probably think I was fatherless since my phone has no “Dad” in it.
For lunch, I enjoyed a green monster salad. I really wish I had tomatoes and feta cheese I could have thrown in there, but it was still good.
I ended up skipping my lunch, and instead, I left work at 4 to take 2 express classes at the gym. I started with a .80 mile walk, before heading in to take the 4:30-5:00 express Body Pump class.
The class was great, and afterwards, I stayed for her express kickboxing class from 5:00-5:30. Holy crap, Marybeth went crazy during this class. It was literally as if she had 20 cups too many of coffee. She was off the wall and had us moving nonstop. I was drenched in sweat and even got a high-ten at one point. Marybeth was loving my enthusiasm, which by the end of the class, disappeared as I couldn’t even lift my legs to kick. They were sore!
After the class, I went for a 1.65 mile walk throughout my neighborhood, and then crashed on the couch with a HIMYM marathon.
Last night, my body was so sore from the workout, that I literally slept straight through the night. Then I snoozed.
I stood in the kitchen for several minutes deciding on whether or not to run outside or at the gym, and lazy girl chose the gym treadmill.
I hoofed my sore body for 3 miles, before tackling 7 minutes on the elliptical and LOTS of stretching. I need to stop hitting snooze because I lose a solid 15 minutes off of my morning workouts.
After the gym and showering, I doused my body with Tiger Balm, which resulted in a comment from my boss. Perfume of the day is Bengay!
I then reconnected with a former love of mine. Oat Bran Pancakes! I used to make these allllll of the time last summer, and yesterday I decided a reunion was necessary.
Within minutes last night, I had pancakes prepped for today’s breakfast.
Oat Bran Pancakes
- 2 1/2-3 tbsp oat bran
- 2 tbsp greek yogurt (I used plain but you can use a flavored one if you want!)
- Dash of cinnamon
- Dash of vanilla extract
All you have to do is whisk together the above ingredients and cook the mixture as you would a regular pancake. I always choose for one big pancake. Then I mix another batch together to make a 2nd. Really not sure why I didn’t double the batch and split the mixture, but all I can conjure is that I’m weird.
My go to method of eating these are to put maple syrup on a small plate, microwave it, top with the pancake, and then douse it in more maple syrup. It’s also good eaten cold and dipped in syrup!
Just one pancake is super filling, and I hope you try these out!
I currently cannot lift my arms due to Body Pump/Kickboxing pain, so I hope by the time this evening rolls around, I’ll be able to play a somewhat decent game of gossip tennis with Jenny.
