Oh boy, oh boy, oh boy, do I have a new yogurt concoction for you guys! Before I get to that, I need to dish about what I did last night!
I know I’ve mentioned it several times on the blog how my coworker wants me to try Zumba, and how I want to try too but am just too chicken. Well, there’s a new class that’s offered Tuesdays at 4:30, so we had planned to go. Turns out my coworker couldn’t make it, which it seems any time I say I’ll do it, something comes up for her and then I wuss out. Well, I decided yesterday was the day, whether she could or couldn’t go.
I was so nervous that I thought I was going to puke all over myself. Once the music started, I got extremely into it and my wild side came out. The instructor couldn’t have been older than me and was probably 23ish? She looked so innocent, so when she started shaking her hips and moving it fast, I was so impressed and shocked.
I had the time of my life and left dripping in sweat. It honestly felt like I was having a dance party in one of my girlfriends’ living rooms. I wore my Polar heart rate monitor and after the hour of dancing, I burned 450 calories, which is a better workout than I ever got from spinning. The hour flew by and I was disappointed I had to leave, but my night got better when I came home to a mix-and-match dinner.

My Mom’s Broccoli and Cheese Orzo Salad, and undocumented bread & butter pickles, which I spilled the juices all over my jacket. If I smell like pickle juice for the next month (because who washes their jacket?), please don’t judge me.
I also tried my hand at STUFT Mama’s Cinnamon Apple Hooligan Pancakes. The only change I made was using about half the recommend use of butter, and I still think I used too much. I tried a bite and wasn’t feeling it, so I let it cool for a bit. After a commercial break, I took another bite and fell in love and ended up eating 90% of the dish. I ate all 4 servings in 3 minutes. Oh my!
No wonder I struggled through my morning run and could only cover 3.7 miles. Opps! Just a little Tuesday night indulgence.
My mid-morning snack, as most of you guys know by now, is usually strawberry or vanilla greek yogurt with PB2 stirred in. Since that typically doesn’t keep me full for too long, I wanted to attempt creating a parfait of some sort.
Since the only yogurt I had on hand was mixed berry, I kept the add-ins simple. Raw oats, chia seeds, frozen raspberries and finely diced walnuts.
The parfait kept me full for quite some time, and it was actually a lot better than I had anticipated. Nothing better than exceeding your expectations! The best part about it was that it was only 210 calories! Can I get a high five?!
Mixed Berry Parfait
- 6 oz container of Yoplait 100 calorie Mixed Berry greek yogurt
- 2 tbsp raw oats (divided)
- .5 tbsp chia seeds (divided)
- 1/2 frozen raspberries (divided)
- dash of finely diced walnuts
- Start by layering 1 tbsp of raw oats, .25 tbsp chia seeds and half of the yogurt in a bowl. Place 1/4 cup frozen raspberries on top.
- Repeat step #1.
- Sprinkle about a spoonful of finely diced walnuts on top, stir and dig in!
I really wanted to try this with a little bit of almond milk stirred in, but I completely forgot it at home! I can’t wait to try this tomorrow with strawberry yogurt.
To make today even better, I finally used my apple corer that my parents bought me for Christmas, and let me tell you, that thing is awesome!

After slicing the apple in core thins (wth?), I first attempted an apple and PB2 sandwich, but pretty soon the pb started dripping down my fingers and my wrist. Scratch that! That’s only doable with regular pb.
I used my brain and then went the practical route. Drizzling the PB2 on the apple thins works much better!
Now, it’s about that time to head to the gym for a weights session. Tonight Lindsay and I are having a girl’s night full of complaining about
men boys, cooking a salmon dinner, and girly TV.
