It’s quite fitting that on the last day of winter we get hit with a wicked big snow storm. The only benefit of the heavy snow was that I got to leave work yesterday around 1:30 and was able to work from home the rest of the day. The best part was that Allie, my roomie and best friend, was also sent home early from work and joined me on the couch for the rest of the day and evening. Ohhhh it feels like I’m back in college, and I love it!
Yesterday I felt like an over-achiever when it came to my meals. Not because I created elaborate dishes, but because I actually ate 3 balanced meals for breakfast, lunch and dinner, and enjoyed delicious snacks mixed in as well.
As a result, along with perfect timing of the week, I’m finally caving in and joining the What I Ate Wednesday band wagon.
For breakfast I enjoyed a 3 egg cheesy scramble (1 egg & 2 egg whites), along with 2 slices of Ezekiel toast, which were topped with apple butter and orange marmalade.
I could drink orange marmalade for breakfast; easily my favorite toast topping.
For my mid-morning snack, I enjoyed a sliced Fuji apple (sans pb2 since I ran out), and for lunch, I tackled a meal that I prepped on Sunday.
At this point, it was almost time to leave work, and because I wanted to hit the weights before working from home, I snacked on half of a Chocolate Chip Cookie Dough Quest Bar before the gym. Actually, I ate it while changing in the locker room. Ample digesting time. 😉
I killed my workout, which consisted of a 1 mile warm-up run, lots of shoulder/lunge work, and the dreaded stair master. My Polar watch gave me about a 400 calorie burn, so by the time I got home, I was ready for a decadent treat.
It ain’t pretty, but I smothered coconut peanut butter on a sliced up banana. So good, so good!
Allie emailed me earlier in the day and asked if I was interested in taco salads for dinner. This girl gets me and can read my mind, as I had a package of ground turkey and shredded lettuce in the fridge for that specific reason.
Under my skimpy pile of cheese, included, diced tomatoes, salsa, ground turkey and a mound of shredded lettuce.
Taco bowls are seriously underrated and officially my new favorite meal!

If you’re from the New England area, then you’ve probably heard of Blog & Tweet Boston. Janine hooked me up with a spot on their emailing list, and invited me to the Pure Barre class they were offering earlier this month. Unfortunately, I was busy, and couldn’t attend, but the idea really tickled my fancy and made me excited for their future events.
If you’re like me, I hate driving in cities, especially Boston. 80% of the time I have a death grip on the wheel and require wearing a diaper. It’s not a pretty site, so when Janine came to me with the idea of bringing similar opportunities to our fellow New Hampshire bloggers and social media crazies, I jumped at the chance.
Janine and I are on a mission to connect social media gurus and bloggers in and around New Hampshire with each other and local businesses for fun, social media/marketing opportunities.
New Hampshire isn’t some dinky state with nothing to offer, which is why we’ll be planning monthly events with area businesses – think fitness classes, wine & food tastings, and not your every day activities – to show you what NH is truly made of.
