Yesterday’s adjective of the day was exhausting. I was hit by a brick wall early afternoon, and in hopes of waking up a little, I hit the gym for a light cardio workout. I completed 3/4 mile walk, 5 minutes rowing, 10 minutes on the spin bike and 1/2 mile cool down walk. I left sweaty and hungry, and immediately dived into a mixed salad topped with chopped bourbon maple pork.
Later in the afternoon, I wanted something sweet, so I tried a Hint water that I grabbed at the race on Saturday.
Have you guys tried this before? I thought it was okay, but not sweet and strong enough. Maybe it’s one of those “acquired tastes” type of drinks.
Later last night, I spent the night plopped on my couch, doing absolutely nothing and loving it. I enjoyed a plate of pumpkin protein pancakes, which were absolutely amazing!
Pumpkin Protein Pancakes
- 1 egg
- 1/4 cup pumpkin puree
- 1/4 vanilla protein or almond/coconut flour
- vanilla extract
- Truvia or sweetener of choice
All you have to do is mix all of the ingredients together and cook the 3 mini pancakes on the stove.
These bad boys hit the spot and were abso-freakinlutely delish!! Shortly after that, I crawled into bed and continued reading Sarah’s Key before Dancing with the Stars came on. I lasted 30 minutes before turning it off and sleeping from 8:30 until 6. I wish I was joking that it was still light out when I went to bed, but it was so needed.
I woke up feeling exhausted, but still headed to the gym for a run. It sucked. My knee really started bothering me again, and halfway through I got a really painful side stitch, so after 3 miles, I hopped on the elliptical for 10 minutes.
It wasn’t the best morning run, but I’m looking forward to playing with some ropes later in the day!
