Today I was all about food. My appetite was out of control, so I baked and I ate the most satisfying foods.
PB2 in Yoplait vanilla greek yogurt. Filled me up for 5 minutes. Then it was an apple and almonds before a 1 mile run and a total body workout around 12:30.
I stuffed an Amy’s Veggie Burger on Ezekiel bread into my mouth, and washed it down with roasted veggies.
Surprisingly, my hunger was in control and I didn’t eat until I got home.
Which was 2 hours later since our boss had us leave early because the incoming storm was causing road issues very early on. Fist pump to early dismissals on a Monday! Funny that these stupid storms only occur on the nights that I actually have errands to run. Like to go buy new running shoes and clothes.
I ate more veggies as an appetizer, and then pretzels dunked in pb as my entrée. I roasted more veggies. And then made sweet potato fries.
Which I hate half of for dessert, because I simply have no will power with anything with the word “fry” in it. Seriously, sweet potato fries are my favorite way to eat sp’s.
What’s your favorite way to cook sweet potatoes?
Also, how do you get the entire fry to be a crunchy burnt fry? I love crunch and was a little disappointed they weren’t burnt enough. I even baked these for about 5 hours!
Sweet Potato Fries
- 1 sweet potato
- Olive Oil
- Wash and dry the potato, and stab the potato with a knife in several spots. You can pretend it’s your lame ex-boyfriend if you want. Set oven to 450*.
- Microwave the potato for about 5 minutes to get the potato a little soft. This will make slicing it easier and lessen your chance of chopping a finger or 2 off.
- Cut the ends off. Cut the potato in half, and proceed to slice the potato into fry size.
- Coat the potatoes with olive oil and salt. Toss in the oven for at least 45 minutes.
You might need to extend the cooking time. Mine were almost in for an hour, but it all depends on how quickly they get crispy.

In between all of this baking and eating, I was able to catch up with my bro (I miss that turd!), and continued reading Safe Haven. Seriously can’t stop. I’m taking a quick break to blog a little and watch last week’s Grey’s Anatomy, but then it’s back to bed with Safe Haven and Josh Duhamel.
Oh and, my coworker’s husband didn’t buy her a cake for her birthday on Saturday. Oh no, he bought her this:
A whoopie pie bigger than her face and her cat. She’s bringing some in tomorrow. YES! Off to go dream about Josh Duhamel and whoopie pies!
