I have addictions. I am human. 5 words: shredded chicken egg white pizza. More on that to come.
No surprise here. I’m still going strong with my egg white oatmeal slathered in peanut butter for breakfast streak.
I have 3 new addictions though.
The first one I can thank Sara for. Mint chocolate chip gum. This stuff used to make me gag. Now I could chew this 24/7. The root beer float is really good too, but only lasts a few minutes, while the mint choco chip keeps me satisfied a lot longer.
We are switching gears here and talking about a new fitness addiction of mine. The bosu ball.
I’ve been working my legs and core on the bosu ball after my runs the past 2 days and I have to say that this bad boy isn’t leaving my workout routines anytime in the near future. I can feel the burn and soreness in my obliques and arms.
Another addiction I can blame on my coach.
Shredded Chicken Egg White Pizza
My coach came up with the idea of this little glorious creation. I came up with adding the shredded chicken since I had a tub full in the fridge.
Not only is this bad boy healthy, but it is insanely delicious too. Okay, so you “know” you’re not eating the real deal greasy pizza, but this is a wicked close second. I’m talking, I felt like I was eating a thin slice of heaven.
- 4 egg whites
- 2 tbsp salsa or pizza sauce
- 1/4 cup shredded cheese
- other toppings of choice
- Spray a non-stick pan and crack 4 egg whites into the pan. Sprinkle oregano on top.
- Let the egg whites cook until almost complete. Cook like a pancake. I only flipped it for literally 3 seconds just to make sure the top was done.
- Spread 2 tbsp of salsa on top.
- Sprinkle shredded cheese on sauce and let melt.
- Transfer to a place when melted and top with shredded chicken and/or avocado.
The bottom got nice and crunchy, which made me feel like I was truly indulging.
I ate it like a slice of pizza, no fork necessary.
Best part are the nutritional facts:
- Calories: 188
- Carbs: 9 g
- Fat: 6 g
- Protein: 24 g
Not bad for an entire pizza, right?!
