I have made progress over here in terms of meals that I am addicted to. I have almost kicked my chicken and green bean obsession, and have moved on to a few other meals, which will be showcased in today’s What I Ate Wednesday post, courtesy of Jenn’s weekly link-up.
Before I made progress, I did however enjoy a breakfast of grilled chicken, green beans, and white rice. I’m testing something out with the white rice here and I’m not too sure if it will stay in the rotation, but we shall see!
For some random reason, chicken sausage was taking over my mind, which meant that I had to stock up on Nature’s Place Apple Chicken Sausage (the best flavor evs)!
For breakfast I’ve been loving sautéed chix sausage mixed with onions, peppers, and served with eggs.
And then an onion/spinach mix with white rice. This one rocked and was my favorite combo so far. The white rice hurt my stomach after, but my stomach had also been hurting all day (yesterday), so not sure if it was life or the rice that caused the pains.
This fall weather is also having me on an oatmeal kick, that and the fact that my running has increased. I always associate running with oatmeal. Yes, I know that I could have unprocessed carbs to fuel my running, but just let me eat my oats. Thankyouverymuch. On Saturday I combined an almost empty container with a full one, and when I went to open it on Sunday, it exploded.
So yes, oatmeal with an egg white mixed in and topped with peanut butter is my favorite breakfast after an intense workout, especially if it’s running related. Carbs = happy body.
The donuts looked so good while apple/pumpkin picking… you know, the apple cider donuts, so instead, I made a batch of my own protein pancakes. I was really hesitant on how these would taste, especially after seeing how they looked, but I was blown away by how awesome they were. They don’t even taste healthy. I topped a batch with some peanut butter, which was absolutely fabulous!
Some of you requested the recipe, so here it is. I found it on this girl’s Instagram account. Saturday & Sunday mornings I LOVE creeping Instagram for fun new recipes. I do this before I get out of bed. Actually, I also do it during the work week too.
Hmmmm, what else have I been enjoying? My mid-morning snack has always been greek vanilla yogurt. I either mix PB2 or real peanut butter in it, depending on how hungry I am and also what fits my macros for the day.

Strawberry frosted with rainbow jimmies is my FAVORITE. Chocolate glazed is also incredibly fab.
