A What I Ate Wednesday post has been long overdue, and now that I have been mixing up my meals more than before, I thought today was a great day to give you a glimpse at the latest meals that I have been obsessing over. A big thanks as always to Jenn for hosting this fabulous link-up!
Breakfast
I know it might seem rather weird, but chicken and sweet potatoes is one of my favorite weekday breakfasts. I wouldn’t have this on the weekend, but I like the staying power it has after an early morning workout and before my snack on a work day.
Mid-Morning Snack
For quite a long time now, greek yogurt with a spoonful of peanut butter has been my go-to mid-morning snack. It cures my sweet tooth, and is just filling enough to carry me until a late lunch. If I were to have this around 3 on a work day, I probably would be ready for dinner by 4:30.
Lunch
Chili with cheese, yes please! Nothing says winter like chili, and nothing says heaven like a bowl full of cheese.
Mid-Afternoon Snack
An egg and cheese sandwich. I am SO obsessed with these that I have to eat one every day. I know again that this is an odd snack and would typically be considered a main meal, but because I count macros, I can make it possible for an egg & cheese sandwich to be a snack.
Dinner
After work I headed over to Lindze’s to spend the evening with her and Mike and little Lucas. I totally forgot to bring the souvenirs from the Smithsonian for Lucas that I picked up on my trip, so it just means that I get to go over again next week! We failed at both doing funny faces at the same time. It’s always me looking like a cray cray person!
After a bit of playing, we settled down for our go-to cousin dinner of tacossss!!! {Recycled photo, but I skipped the cheese and sour cream/plain greek yogurt toppings. I had salsa and fresh matos (as Lucas calls them).
Evening Snack
My go to Quest Cookies & Cream bar. This is a photo from a few weeks ago, but I love it!
I want a burger and fries so badly, but not the “icky” feeling that I would get from it. Give and take people!
