I am officially peanut buttered out. I’ve put myself to shame. I think this is the first time I would ever turn down a spoonful of peanut butter.
Based on my calculations, I’ve consumed 8 tbsp of PB2 today. Let’s break it down, because I know everyone cares.
- 2 in my mid-morning yogurt
- 2 on my Quest Bar
- 4 on my sweet potato
I’m going to barf. I didn’t even lick the bowl clean tonight.
After work I headed over to Supercuts for a quick split-end trim before getting home and feasting on almost half of a sweet potato drenched in PB2 and unsweetened coconut flakes.
See that awesome imprint in the peanut butter? I’d like to personally thank my dog for enjoying my dinner while I grabbed my laptop from the kitchen. I guarantee he didn’t get to lick the bowl either.
Chocolate Avocado Mousse!
Quick and easy is how I roll. I’ve been eager to try this recipe out ever since Julie raved about it, but I think it’s one that I’ll have to get used to. That or I just have to test out other add-ins, because it wasn’t as sweet as I was hoping for.
Into the food processor went:
- Ripe avocado
- 4 tsp cocoa powder
- 4 tsp honey
- several banana chunks
- water to get everything moving
I highly recommend you not try this warm! Right now I have it chilling in the fridge and plan to test it out again a little later tonight!
