Well good morning and happy Monday! I hope you all had as great of a weekend as I did! My weekend was spent with my college girls visiting Michelle in Stamford, CT, so it was full of girl talk and fun. Let’s dive into the recap. Fair warning, there are a lot of pictures!
On Saturday morning I woke around 6 am and got a short run in before Lindsay picked me up at 8. We were at Nicole’s an hour later, and then we hit the road for a little less than a 3 hour drive to Michelle’s new condo. Once we arrived, we changed and headed to Kensico Dam Plaza in New York for a little outdoor adventure. The park was absolutely adorable, with families enjoying picnics, teaching kids to ride their bikes, playing ball, laying out and talking, and walking.
After enjoying a bite to eat on the grass, we got up to tackle this beast. On both sides of this dam wall are trails that you can walk up, and then walk across it. The top part of the wall is a road/bridge.

On the drive home, we stopped by 16 Handles for some fro-yo. I wasn’t hungry and didn’t want to spoil my appetite for dinner, so I made a bowl, but saved it for dessert. 🙂
Once we made it back to Michelle’s condo, we relaxed on the couch and watched a bit of TV, before getting ready and heading into downtown Stamford for dinner at Sign of the Whale. I ordered the farro bowl (minus the dressing), and it was the best meal I’ve possibly ever ordered out.
Since I can’t have egg whites, I broke the yolk over the bowl and used that as a sauce/dressing, and then discarded the remaining egg white. The bowl had farro, chickpeas, spinach, red bell pepper, green beans, dried cranberries, walnuts, and feta cheese. Since I have to get groceries today, I am buying all of the ingredients to make this for my lunch this week. I cannot wait!
On our way back to the car after dinner, we stopped by the fountain in Harbor Point Commons Park for some group pictures!
Once we made it home at 9, we settled in on the couch and watched a Lifetime movie…. while I enjoyed this amazing bowl of fro-yo. First, but not last, of the year!
On Sunday morning, we headed to Dunks so the girls could grab food and coffee, before heading to a nearby park for a pre-road trip home walk. We did 3 laps and covered 1.5 miles, before we all packed up and made the 4 hour drive home. Once home, I unpacked, went for a 3.5 mile walk, did some reading, watched YouTube videos, and was asleep around 10. All in all, it was an amazing weekend!
