Hey guys! Not only is today What I Ate Wednesday, but it’s also a snow day! We’re getting nailed with snow, so I’m enjoying a lazy day at home, where I’ll be watching Nashville all. day.long. I had a 101 degree fever by the time I got home from work last night, so it’s been a miserable past few days. Food makes me happy, so without further ado, here’s my addition to Jenn’s weekly linkup!
Loving the hamburg casserole that I made on Sunday. My absolute favorite type of pizza is hamburg and mushroom, so having those ingredients in here, along with sweet potatoes, makes this a knockout!
I made Practical Paleo’s spaghetti squash bolognese Sunday night, and have been enjoying this for dinner the past few nights. SO good! I could have eaten the entire meat sauce combo in one sitting. This will definitely be a staple in my weekly meals!
While I was in Nashua on Sunday, I stopped into Trader Joe’s with the momma to stop up on essentials. It’s about 20 minutes from my apartment and 35ish from home, so I only get to go there if I’m in the area. I stopped up on coconut milk, nuts and almond butter. Naturally, all of my snacks have included these items.
